Job description: Department of Food Science invites applicants for a PhD fellowship in food structure research. The project is part of the research project “NNF Start Package for José Bonilla’ founded by the Novo Nordisk Foundation.Start date is 1 September 2025 or as soon as possible thereafter.The projectThis NNF start package (NNF SP) will allow the establishment of a group to study how plant proteins form specific microstructural arrangements, and how these microstructures dictate rheological and textural attributes of sustainable food materials. The research will be focused on plant-based proteins, as much is yet to be discovered about their functionality, especially textural functionality given the limited textural characteristics of current plant-based foods. The research will take advantage of advanced super-resolution microscopy, label-free chemical imaging, fluorescent lifetime imaging, and advanced image analysis. This position is aimed at studying the structure formation of plant proteins under shearing. Further information on the project is found at the Department website: .Who are we looking for?We are looking for candidates within the field of Food Science and willing to develop a set of technical skills in techniques including rheology, microscopy, image analysis. Experience with these is a plus. English proficiency is required for this position. Previous or ongoing experience with writing and structuring of scientific articles is also a plus. To be eligible for the regular PhD programme, you must have completed a degree programme, equivalent to a Danish master’s degree (180 ECTS/3 FTE BSc + 120 ECTS/2 FTE MSc) related to the subject area of the project, e.g. Food Science or related field. Employment as PhD fellow is full time and for maximum 3 years.Employment is conditional upon your successful enrolment as a PhD student at the PhD School at the Faculty of SCIENCE, University of Copenhagen. This requires submission and acceptance of an application for the specific project formulated by the applicant.Terms of appointment and payment accord to the agreement between the Danish Ministry of Taxation and The Danish Confederation of Professional Associations on Academics in the State.
