Job description: The opportunityDelaware North Australia have an exciting opportunity for a talented Chef De Cuisine – Functions to join our culinary team at the iconic Melbourne Cricket Ground (MCG). With a capacity of more than 100,000, the MCG is the largest sporting stadium in the Southern Hemisphere. Hosting several Australian Football League (AFL) teams, as well as cricket matches, concerts and special events and non-event-day functions.We are looking for a dynamic and experienced Chef de Cuisine to oversee the MCG’s event and non-event-day functions. As a proven leader with exceptional culinary and managerial expertise, you will mentor and develop a diverse team while delivering world-class dining experiences. Your background in both high-end and large-scale operations, combined with strong commercial acumen, will be key to success in this role.What we offer

What will you do?

  • Oversee all culinary operations across the MCG’s event-day and non-event-day functions.
  • Deliver high-quality catering experiences, ranging from small meetings and conferences to large-scale gala dinners (up to 650 sit-down guests) and corporate events.
  • Develop innovative menu concepts that align with current food trends and guest preferences.
  • Provide strong leadership, mentorship, and training to a diverse culinary team, fostering a high-performance culture.
  • Set, implement and review high food service standards, implement systems.
  • Assist in managing department budgets, food costs, utilising IT systems to drive efficiency and profitability.
  • Managing performance and labour costs for permanent and casual kitchen staff.
  • Championing on-site food safety and HACCP accreditation.
  • Combining with other F&B arms to provide first-class dining to all customers.

More about you

  • Proven experience managing large-scale function and event kitchen operations (venue experience highly regarded).
  • Demonstrated success in leading, developing, and motivating a large, diverse kitchen team.
  • Experience in menu development, stock control, and cost management.
  • Strong commercial acumen with a track record of delivering business outcomes.
  • Relevant culinary qualifications.
  • Proficiency in business technology, including stock control systems, spreadsheets, and accounting software.
  • Excellent communication and leadership skills, with the ability to engage at all levels.
