Job title: Budget Analyst
Company: Mortons Of Galway Ltd
Job description: Morton’s of Galway is a family-owned, fine food emporium located in the heart of Salthill, known for its excellence in gourmet retail. We offer a full spectrum of high-end culinary departments – including butchery, fishmonger, delicatessen, kitchen, catering, bakery, premium produce, and exclusive artisan selections. Our store is a cornerstone in Galway’s food culture, dedicated to premium quality, sustainability, and refined customer experience. ⸻ Role Summary We are seeking a highly analytical and strategically minded Budget Analyst to lead end-to-end financial planning and cost optimization across all store departments, including butchery, seafood, deli, hot kitchen, catering, bakery, produce, and exclusive in-house product lines. This position plays a key role in shaping margin performance, waste reduction, and operational alignment across our gourmet retail environment. This role is especially suited for professionals with a structured, engineering-driven mindset, capable of designing data frameworks, forecasting systems, and process efficiencies across multifaceted environments. ⸻ Key Responsibilities Own the budgeting process for all store categories: meat, fish, deli, hot meals, bakery, fresh produce, and specialty items. Prepare and monitor monthly financial plans; deliver weekly variance analysis to executive leadership. Lead department-specific waste control initiatives (notably in perishables such as butchery, produce, and bakery). Develop accurate cost models for new menu concepts, catering packages, and seasonal offerings. Translate operational data into actionable KPIs; present financial and strategic insights to the store head and family owners. Collaborate with department leads to align cost-efficiency targets and identify opportunities for lean practices. Contribute to supplier contract evaluations, focusing on pricing, delivery, and wastage terms. Support demand forecasting and inventory planning using consumption data and trend models. Manage interdepartmental shift scheduling with MS Project (or equivalent), ensuring cost-effective staffing coverage during peak periods. ⸻ Ideal Candidate 1 to 2 years experience in budget analysis, financial planning, or operations finance within food retail, supply chain, or production environments. Proven hands-on experience with at least two store areas (e.g., kitchen + deli, bakery + produce). Advanced Excel skills (pivot tables, what-if analysis, macros); familiarity with ERP systems preferred. Working knowledge of HACCP, waste management protocols, and yield analysis. Familiarity with MS Project or equivalent project scheduling software. Excellent communication skills in English; confident in briefing senior stakeholders with precision. Structured, proactive, detail-driven – with a mindset for continuous improvement and data integrity. Flexible to work across departments, including weekends and holidays, where needed
